Yes, you can boot from the install media (the USB flash drive), then select the "Advanced" install option (this is not the default.... its the 2nd choice that appears below the default).
This option shows all of the existing partitions. It will also let you delete each one, until all you have is "un-partitioned space". There is no need to recreate them, the install of Win10 will do that on its own.
