hi im trying to:

add a phone number as a contact in skype for business with a name

or add an email contact and associating it with a name so I can have a contact list, it seems possibly in Skype but not in Skype for Business, is this possibly in Skype for business, it worked in Lync before the upgrade a user claimed?

Is it also possibly to transfer contacts from an iphone to Skype for Business contacts?

You can add contacts to skype for business account easily follow the steps guided by Microsoft support team:

And

yes you can transfer contacts from iphone to skype for business just by exporing all contacts of iphone in vcf format and then importing them to skype.

Sorry I mean an external user. Then you can can't modify the name. Or if you only add a phone number then there is no name attached to the number.

Does that make sense?

If I understand this correctly, this can be achieved using Outlook.

You can create the contact in Outlook , and then you also can search the Contact in Lync.

Please correct me if Im wrong.
