Updating a custom-made Windows image - in Audit Mode?

Hi

I'm planing to create a Windows Image for Offline Deployment. With Windows 7 I'd update it in Audit Mode (CTRL+Shift+F3 from OOBE) - but this is not working for Windows 8.1 (compare https://social.technet.microsoft.com/Forums/en-US/afc7f693-f742-402f-b513-063989b79c2f/windows-81-enterprise-windows-updates?forum=w8itproinstall)

So now I'm wondering if I should complete OOBE and sysprep the system from non-audit mode or if I should use the Windows Update PowerShell Module (https://gallery.technet.microsoft.com/scriptcenter/2d191bcd-3308-4edd-9de2-88dff796b0bc) while in Audit mode to update Windows to the most up-to-date state?

What are advantages and disadvantages of both options?

Thank you

What I do is have a test deployment with a base image. I go through OOBE, set Windows Update to disabled and then manually check for updates. Then I download each update (possible) from the Update Catalog. Next I can mount the test image, add the updates with DISM and then redeploy it. For testing, go through OOBE on that, go to Windows Update and verify the ones you added do not show up in the list.

Here is the Update Catalog:
