Does anyone of you know if it's possible to do a segretation for S4B in a SingleDomain enviroment?

As described here https://technet.microsoft.com/en-us/library/dn933910.aspx a SingelForest with subdomains is possible.

But is it also possible to filter tenants in a singledoamin enviroment using a attribute?

Yes, you can use the msRTCSIP-GroupingID attribute in AD to segregate the address book.
