I am running Windows 8.1 and I opened a jpeg by right clicking and clicking on 'Open with' (I selected paint) now all my jpeg's open with paint how do I reset this please ?

Make sure you have logged in as the Administrator.

Right click the image. From the displayed context menu, hover mouse to Open with.

From the displayed submenu, click Choose default program.

On the opened How do you want to open this file box, make sure that Use this app for all .JPEG  files checkbox is checked. From the available programs, click Windows Photo Viewer to make it the default program for viewing images.

Apart from S.Sengupta`s suggestion ,we also can check the following configuration :

Control Panel\All Control Panel Items\Default Programs\Associate a file type or protocol with a program

Navigate to the .jpeg option and then select "Change program ",select a program to open it .
