Whenever I join a Lync meeting it automatically shares my desktop without me having to click on "share desktop". I can't find a setting to correct this.

There's not a setting to enable or disable that as it's not a native feature.  Either a third party app is doing that or something else is wrong.  See if the issue occurs on another machine or another profile on the same machine.  See if there are any apps related to Lync that can be uninstalled.  Again, that's not normal or configurable.
