At work we use Lync desktop and mobile clients. My desktop recipients complain that messages I send with the mobile iOS client are in a font that's too tiny to read. How do I change the font size that my client sends? Or can the client be configured to send all messages as raw text, so that the recipient can control the incoming message font?

I am not aware of the ability to set font sizes for the mobile client. Are you able to provide an example?

The only option that you have that I can think of is to force text only. But this means no HTML or RTF (so not picking colors or font sizes) 

You can set this using Set-CsClientPolicy and setting the DisableRTFIM and DisableHTMLIM to true.

So far as I know, there is no feature to change the font size on mobile device for Lync mobile client.

Have a look at the following screenshot. You can change the IM Text Display of Lync Desktop client.
