Is there a way to view the logs of say the past 2 hours to see what emails have been dropped by the system as spam, or what connections have been dropped because of one of the other filters like reputation or Network black list?

There is a doc called "Monitoring Forefront Protection 2010 for Exchange Server" that you can google.
Forefront Antispam actions will be logged to the Agent log which is at Program Files (x86)\Microsoft Forefront Protection for Exchange Server\Data\FSEAgentLog. A new log is generated daily and it's in the Exchange Agent log format.
This where I would go to see Cloudmark/ForefrontDNSBL actions in detail.
