I just bought a new computer and it came with windows 8 already installed. I just upgraded to I. E. 9 and i dont like it. How can I change my computer back to I. E. 8 with windows 7??

Hmm i didn't know windows 8 is already release?? :( As for how to switch IE 9 back to IE 8, you could try the following by going to ctrl panel>programs>programs & features>view install updates, next it would show a list of updates which you have install, look for IE9 & uninstall

if i uninstall IE9, will i still have a version of internet explorer to get back online with or will it completly erase all versions on I.E.?

If you uninstall IE9, the machine will revert to IE8.
