small business exchange server 2007 on windows 2008 SBS

Hello. Our company has just acquired a small business and I have the task to document the domain infrastructure. The domain server is a 2008 Small business server and that use Exchange 2007 that comes with this licenced installation. I am not familiar with Exchange sever so this is where I need help. I’m looking for the configuration on incoming and outgoing configuration. All Outlook clients are configured with an Exchange account. What I find odd is that all incoming ports in the router/firewall are blocked (no IMAP or POP or SMTP port configured). The MX records point to an outside spam scanner so I’m guessing that after scanning the emails are pushed to my firewall IP but this IP is dynamic not static. Even then it should be blocked since no ports are open. I’m confused. Anyway, can anybody guide me on where to go in Exchange to see the configurations to send and retrieve email when they come in and out to the Internet? I’m looking into the Exchange Management console and I can’t find anything and don’t know where to go. I can’t find documentation on the Internet either. TY
