how we can disable those services in Windows 2003 server?
disable NETSTAT,RSTAT,TFTP,RWALL,RUSER,DAYTIME,BOOTPS,FINGER,SPARYD,PCNFSD,WHO service

Hi
You can access windows services from , Control Panel> Administrative Tools > Services or type Services.msc in RUN menu.
Right click from service and select Disable for StartUp type configuration.
But i don't see this services in windows.
NETSTAT, FINGER is client tools in windows not service or server tools.

You can also use net stop from Command Prompt to stop services. Here is an example on how to stop Windows Media Services:

DISCARD:
Under Windows systems, set the following registry key to 0 :
HKLM\System\CurrentControlSet\Services\SimpTCP\Parameters\EnableTcpDiscard
Then launch cmd.exe and type :
net stop simptcp
net start simptcp
To restart the service

- Under Windows systems, set the following registry keys to 0 :
HKLM\System\CurrentControlSet\Services\SimpTCP\Parameters\EnableTcpChargen
HKLM\System\CurrentControlSet\Services\SimpTCP\Parameters\EnableUdpChargen

Some of these do not ship with Windows Server 2003. How did you install
them in the first place?

i believe Florian is not the one put those services there on this server or servers !!? or maybe there are programs that using those services ,
but just in case if some or all of those services installed , how to check and disable them if possible ,

use netstat or another port scanner and uninstall or disable those services

Go to below mentioned path and check the services file for particular service is running or not.
Path : C:\WINDOWS\system32\drivers\etc
File : services - open this in notepad and check the service if its"#" marked means disabled if not its running.
Ex:
#echo 7/tcp - Disabled
#echo 7/udp - Disabled
#discard 9/tcp sink null
#discard 9/udp sink null
systat 11/tcp users #Active users
systat 11/udp users #Active users
#daytime 13/tcp - Disabled
#daytime 13/udp - Disabled
