First of all, Windows Server 2000 is no longer supported by Microsoft.
For each new operating system, you will find new features and enhanced ones. Performance and security are also better and enhanced.
So, there is many and many difference so it would be better to specify what is interesting for you (AD DS, DNS, ...) so that we can help you more.
