If not limited by software requirements, I typically advise customers to install the latest Operating System; so in this case, Server 2008 R2.Rich Prescott

This depends on your server hardware. If your server is x64 then I advise 2008R2. If you only have a 32 bit processor, you have to install 2008SP2 32 bit.If you found this post helpful, please give it a "Helpful" vote. If it answered your question, remember to mark it as an "Answer".

Hello,
if no requirements exist that you must stay with 32bit then go with Windows server 2008 R2. 64bit is the future in OS versions and also some services already rely on it. Exchange since 2007, the Exchange 2010 management console also require 64bit versions
and there will become more.

Hello,
first of all note the 2008 R2 Server exist only on 64 bit and 2008 Server exists on 32 bit and 64 bit.
So here you have to see what is your need and what this server is for. Once identified, you have to see if you still need a server with a 32 bit infrastructure or not. Is yes, then you have to use 2008 Server 32 bit.
If not, I recommend using 2008 R2 Server for performance reasons.

If your hardware supports x64 i would use 2008 R2.
We've recently updated a lot of our old servers and wen't completly for 2008 R2 exept for one server that needed 32 Bit.

Hi. my recommendation install Virtual machine for this role, it will be low utilization process, so u can use physical box for other services.
Of course w2008 r2 is recommended. Even more, if you will use enterprise edition u can run up to four instances.
