How do I set up a Windows 8 Raid 5 array?

Assuming you ask about software built-in RAID. That's done by Storage Spaces. Here are few step-by-step guides on how to create spaces. When doing type selection use "Parity" as that's RAID5 equivalent. See:

If you really need hardware RAID5 then refer to your HBA/RAID vendor.
