From the current information, please first make sure that the hyper-v VSS writer is in health state using VSSadmin list writers command from an elevated command prompt. If the writer is in failed state, please restart Hyper-v Virtual Machine Management service.
Some folks fix it after moved the vm data to sub folders in the CSV, please try it then monitor the issue again.
