Reverting from Windows 10 to Windows 8.1

I noticed, last night, that after the latest round of updates my start menu and computer search buttons had become unresponsive. I attempted to fix this on my own before finally deciding it was a lost cause and deciding to revert back to Win 8.1. Unfortunately, the computer informed me that it was unable to do so, stating that several important files were missing. This led to me redoubling my efforts to solve the dead start button issue, before finally giving up and doing a system restore earlier today. I was, however, rather dismayed to see my computer boot to Win 10 instead of the Win 8 I was expecting. After several minutes spent crying, screaming and asking for the sweet embrace of death, I decided to venture once more into the Win 10 settings menu to see if I could revert my OS from their. Unfortunately, for reasons unfathomable to man and God, the option to roll back the OS had disappeared from the recovery menu. If anyone knows how to bring it back, I'd be very appreciative.

TL;DR: Want Windows 8.1 back! No option to do so. How fix?
