Previous versions displays only the 64 OLDEST previous versions for vista, win7, 2008, 2008R2
I set HKEY_LOCAL_MACHINE\SYSTEM\CurrentControlSet\services\VSS\Settings\MaxShadowCopies to 128 which allows the server to create 128 shadowcopies - which it does.
HOWEVER. the 'previous versions' tab on some clients only displays the oldest 64 previous versions and not the newest 64. I can verify this by changing MaxShadowCopies to 80, and I see the oldest 64 previous version but not the newest 16.
Server is win08R2
Client 2003r2 or XP: ALL 128 pervious versions are displayed
Client vista/win7/2008/2008R2: ONLY the 64 oldest are displayed

Only the last 64 are manageable... you have to update the registry.
Try deploying that variable through GPO as a registry update, see if it changes on the client facing side.
Computer Configuration\Preferences\Windows Settings\Registry - Right Click the blank section and select "New Registry Item"

MaxShadowCopies controls how many shadow copies can be made (default is 64 max is 512) something else controls how many are displayed - and whatever the setting is it is different
in different version of windows.
Just for kicks I tried making the above registry change in a client computer and it made no difference (of course I had implicitly tested it on the sever since it was already set
MaxShadowCopies=128 but it only displayed 64)

We do have the same exact problem, after updating the registry, restart the server, ONLY WinXP and Server 2003 can see more than 64 previous versions of copies, Windows 7 and Server 2008R2 (include the file server itself) can only see the FIRST 64 previous
versions of copies.
No kidding, install a virtual XP yourself and you will see the result, there is got to be a fix or registry to modify for it, or maybe it is simlpy MS's bug...
