When a client needs to communicate with a remote host, the packet is sent to the default gateway (the router) which routes the packet towards the remote host. Packets are routed throughout the network with information in each node's local routing table. The word you are looking for is either forwarding or routing. Both terms are generally used synonymously, although are slightly different.
