Hi, is it possible to perform an inplace upgrade of win 2008 R2 hyper-v host to win 2012 hyper-v server?
The upgrade path is supported.

but I would ask them over on handling the guests during migration / upgrade.

I've successfully upgraded two of my 2008R2 core Hyper-V servers to 2012 Standard Core with absolutely no issues. I've never been a fan of inplace upgrades, but sometimes it's the only choice we have.
Are your VMs on the system drive? Is there anyway you can do a fresh install and import your VMs afterwards?
Thanks for your posting in Windows Server Forum.
Kindly refer beneath article for in-place upgrade from server 2008 R2 to server 2012.

Hope it helps!
