If I delete the search service application in Central Admin, will Central Admin delete the search center URL?  Will CA  delete the search custom templates and search result pages too?

Deleting the Search Application will not delete the search center.  Nor will it delete anything that was created in the Search center like templates or result pages.  It will only delete things defined in the search service application itself like content sources, the index and result sources defined in the search service itself.
