Is there a difference between having your cluster nodes running hyper-v host running hyper-v server versus windows server 2012 r2 hyper-v server role as far as capabilities are concerned?

Generally there is no difference Hyper-V feature wise. However, Hyper-V Server has no GUI, and as such will run only as Core edition. But other than that, you can join domains, run VMs highly-available with Windows Failover Clustering and have SANs attached via MPIO.

This is where there are caveots.
Hyper-V is Hyper-V. The difference of Hyper-V Server vs Server with Hyper-V is primarily licensing - VM licensing is a consideration.
In regards to SCVMM - there are some small actions that SCVMM cannot perform with Hyper-V Server that it can perform with Windows Server with Hyper-V.
These are mainly actions impacting VM deployment with Service Templates in specific scenarios.
