Forcing install of defferent editions.
I have the rc0 dvd downloaded from MSDN, during the install I am not presented with an option to choose the 'edition' I want to install. The DVD lists Standard through DataCenter all on the one DVD on MSDN. Is there a way to 'choose' which edition I want to install? Without having to have a muli-processor machine etc?

Windows Server 2008 Standard EditionThis edition of Windows Server 2008 provides key server functionality across most server roles and features. It includes both full and Server Core installation options.
Windows Server 2008 Enterprise EditionThis edition builds on Windows Server 2008 Standard Edition to provide greater scalability and availability, and adds enterprise technologies such as failover clustering and Active Directory Federation Services.
Windows Server 2008 Datacenter EditionThis edition offers the same functionality as Windows Server 2008 Enterprise Edition with support for additional memory and processors, and unlimited virtual image use rights.
Windows Web Server 2008This edition is designed specifically for use as a Web and applications server. Other server roles and the Server Core installation option are not available in this edition.
Windows Server 2008 for Itanium-based SystemsThis edition is designed for use with Intel Itanium 64-bit processors

There are three reasons (that I can think of) why you wouldn't be presented with the option to choose between the Standard, Enterprise and DataCenter edition (and their associated Server Core equivalents) when you use the DVD:
You entered a product key for a specific versionInstalling Windows Server 2008 without a product key is an option that allows you to choose the version you want to use for a limited time. Not entering a product key will present you with the six choices mentioned above.
Your DVD comes with a specificanswer fileWindows Server 2008 installations can be altered like Windows Vista installations to include answers to installation questions. These answers are typically stored in an answerfile named unattend.xml.Your DVD might have an answer file that includes a product key for a certain version.
You supply an answer file using removable mediaWindows Server 2008, just like Windows Vista, allow you to install the Operating System with the ease of an answer file that provides answers to the common installation questions. These answer files may be stored on floppydisks and/orUSB media. However unlikely I suggest you take a look at the contents of floppies orUSB media attached to / inserted inyour test machine if the previous two suggestions don't turn out to solve your problem.
Note:
(Not) Having multiple processors or cores has no effect on the availability of choices.
Don't expect Windows Web Server 2008 or Windows Server 2008 for Itanium-based Systems to be available as a choice on the Standard, Enterprise and DataCenter DVD. (The Standard, Enterprise and DataCenter DVD only contains these three versions for a specific architecture (either x86 or x64). Windows Web Server 2008 is a separate DVD (alsoavailable in x86 and x64 flavors). Windows Server 2008 for Itanium-based Systems is also a separate DVD.)

I am using the product key provided for the DVD on MSDN, there are not seprate options for prodict keys that I can find. I skipped the Product key during install,and I am than presented the options for the 3 different editions... thanks!!!!
