Although Office365 is integrated with my server on the users side; I don't have anything in the SharePoint libraries visible in the dashboard. When I try ADD A Library it doesn't do anything but try to connect with no luck. Thank you for your help.

Hi,
Make sure that there is internet connection on the server. Then, on Dashboard STORAGE SharePoint Libraries, click Refresh on the right column. Or try to restart the server and confirm the result.
If the problem persists, confirm the steps of O365 integration - Manage Office 365 in Windows Server Essentials:
