Could you let me know, is there any possible way if we create an Active directory user(windows 2008R2) and assigned that PC only one user to use only print.. that user can't able to see network share or what ever on network..

It is very possible but could require major changes on your network depending on how it is currently setup. Assuming your users are assigned to user groups and the groups are assigned access to the shares you can make sure this printer user is not a member of these groups and create a new group for this user. You could even go further and deny this new user or group access to the shares but this is not best practice as it could cause complications.
