Are there any issues installing W2K8-R2 Standard or SBS-2011 on 36GB of memory?
Many of the new CPU's only deliver maximum memory speed when used with triple channel memory. This means a server could use 3x(4GB+8GB) or 36GB of memory instead of the classic 32GB of memory. W2K8-R2-Standard specs call for 32GB of memory.
Are there any issues installing W2K8 versions on physical hardware with more memory than it is designed for?

There is no issue. Just it will see only supported RAM that can be added.
