what order to uninstall exchange 2007 server roles
Hi
what order should I uninstall our exchange 2007 estate now we have moved to exchange 2010?
we have hub, cas and CCR mailbox roles
I was thinking mailbox (not sure I need to remove or just shutdown passive CCR node), then CAS and finally hub

I would recommend uninstalling the mailbox roles first. Here is a great article to walk you through uninstalling the CCR environment:

Per my knowledge, there’s no official document for the exchange 2007 server roles’ removal order
Please make sure that all services are not requiring exchange 2007 server to function, like mail flow (HT), client access (CAS), public folder (MBX)
Tim’s suggestion is an option

Well, it would almost be the opposite of the installation order :)
