If you have Exch backups then you can restore the mailbox and use Exmerge to pull out the contacts. Restore to an Exch RSG and get the data out. http://support.microsoft.com/kb/823176 Sukh

Yes you can if they were contacts in yuor mailbox and NOT a local PST file.Sukh
