There is no real checklist. If you moved all functionality, mailboxes, and public folders to Ex2013 you're almost done:

1) Remove the Exchange 2007 mailbox databases

2) Remove Exchange 2007 public folder databases

3) Uninstall Exchange 2007 (setup /mode:uninstall)

As Michel said there really isn't a check list.  The one thing I would recommend doing prior to uninstalling Exchange 2007 or removing any of the databases or public folder dbs is shut down the entire legacy Exchange 2007 environment.  That will give you the ability to alteast see if anything is affected by removing the legacy servers from the environment.  In my experience people almost always miss updating things like scanners and other products who relay email through the Exchange environment.

Hi Prathap,

Agree with all above suggestions, I also recommend you can refer to the following articles to understand more details about decommissioning  Legacy exchange servers:

Remove the Last Legacy Exchange Server

If you're removing the last Exchange 2007 server, confirm that you don't plan to use any of the Exchange 2007 features that have been removed in Exchange 2010/2013.

Legacy Exchange Servers Decommission

Note: Before decommissioning Legacy Exchange servers,You should shutdown all Legacy Exchange servers for a week to test if their removal will cause any issue.
