You should never play around with IP change on exchange servers, until or unless there's not other choice.
Anyways, it's just not the exchange server you will have to make the changes, but to your DNS server, to your firewall and your SmarHost (If you are using)
Stop all the exchange services on the server. Change the IP address and restart the server.
Check if all the exchange services has started Automatically, or not?
If not, then run ipconfig /flushdns and ipconfig /registerdns
Check the services again and if some of them are not started, start them manually. Remember to change the IP on DNS, Firewall and SmartHost.
At the end check the client connectivity, mail flow, owa, OA etc.

Change IP address for Exchange server is OK. There will not be an issue. I suggest you stop the Exchange services, change the IP address of the server.
In the Exchange 2007 receive connector, add the IP in the allow mails from IP list. Make sure your DNS servers are updated with the new IP and able to resolve properly. If any records which has old IP address present, delete them.
