With AV you pay your money and take your choice. Personally I have seen Symantec cause more problems with Exchange servers than anything else. I now operate the standard practise of any problems with Exchange with Symantec installed, I remove Symantec as a first course of action - it usually revolves most problems. McAfee has a habit of quarantining log files - I have seen it do that more times than it should. Trend just seems to slow everything down. I tend to suggest avoiding any of the major big four - so Symantec, McAfee, Trend and CA. I find they are bloated and are usually sold in suites only. The first question to be asked is what are you running on the desktops. Whatever it is, immediately strike that off your list. Buy something else so that you have multiple level of cover. I usually use either GFI Mail Security or Microsoft Forefront, because both of those are multiple engine. Although I haven't seen a virus caught by Exchange AV for some time. Most antispam applications stop them because they are using the same distribution method, just with different payloads.
