What exactly do you need to know? The general procedure is: 1. Install new server. 2. Create public folder replicas, allow content to replicate, remove replicas from old server. 3. Move all mailboxes. 4. Move all connectors. 5. Change DNS entries to point everything to new server. 6. Wait a couple of weeks. 7. Shut down old server. 8. Wait a week or two to be sure nothing breaks. 9. Start up old server, remove Exchange.Ed Crowley MVP "There are seldom good technological solutions to behavioral problems."

Another option could be performing a Physical-to-Virtual-Machine Conversion. Do a search and you'll find step-by-step instructions. You can install all roles on the same server if you want. TechNet has "work instructions". Look there.Ed Crowley MVP "There are seldom good technological solutions to behavioral problems."
