When installing CU6, I also installed interim update KB2997209_2997847.
Does this update need to be uninstalled prior to installing CU7?

Not CU8?
Unlike Exchange 2010, you typically do not need to remove the interim updates before installing the latest CU in Exch 2013.

I have contacted Microsoft ans have been informed that as of CU3, CU's may be installed directly over the top of installation with interim updates.
If you did have an interim update installed and strong name verification disabled, you should re-enabled it after the new CU is applied.
