Unable to move Default Offline Address List to new server
We migrated our Exchange 2003 server to Exchange 2007 last summer. We neglected to migrate the Offline Address List to the new server before we decommissioned the server. When we try to move the Default Offline Address List with either the console or the shell, we get an error message that the old server cannot be found. Is there a way to move this address book at this point? If not, can I just delete it and recreate it?

Not so sure about deleting/recreating but you could create a new GAL and assign it to all Mailboxes in your organisation. http://technet.microsoft.com/en-us/library/bb232063(v=exchg.80).aspx
