well you can't . You will need to use 3rd party application unless you have configured the journaling in exchange.

how many mailboxes. I one i know for large organizations are MailExtender from EMC. You can also try one from Baracudda network I guess.

Then i would not recommend you investing this much for just 30 mailboxes. youmay have to do it manually. what you can do it export all the mailboxes and make PST for each of them. Then setup a new mailbox and import all the PST to that single mailbox. Then do the full search on this.
