Hi,
From your description, I know you want to search Microsoft Office 2010 files in SharePoint 2010.
Based on my research, I recommend that you may try to do following steps:
1) Migrate file shares to SharePoint 2010
More information:

You may refer to the following video to know Several ways of saving Office 2010 files in SharePoint 2010

2) Enable content to be searchable
a) Make your content available in search results, and set the permission.
b) Show or hide content on a site in search results
c) Show or hide content from lists or libraries in search results
d) Choose whether to include the contents of ASPX pages in search results
e) Exclude content in columns from search results
If you need to know more about the information, please refer to the following link:

Very interesting George. It does help, but I'm more curious as to what needs to be done to each office document to make each more searchable. I'm sure establishing meta-data is a start. What else needs to be done to the documents for them to be more searchable?
