Can you differentiate between mails you forward by outlook rule and mails you manually forward from tracking?

You can increase diagnostic logging for rules and that will get picked up in the event logs when those forwarding rules fire.

I agree with AndyD’s opinion, you are able to get picked up in the event logs when you change the level of rules in diagnostic logging. With the level increased,
you can perform the task in the event logs when mailing forward by Outlook rule.
To change the logging level, you can follow the steps below to achieve the goal:
1. If you use Exchange Server 2003, Please try this way to change the level of rules in diagnostic logging:
Exchange System Manager->Administrative Group->Servers->Exchange Server->Properties->
Diagnostics Logging->MSExchangeIS->Mailbox->Rules->select Maximum in Logging level
2. If you use Exchange Server 2007, please use this command to change the level in Exchange Management console:
Set-EventLogLevel “MSExchangeIS\9000 Private\Rules” –Level High
After you change the level of rules in diagnostic logging.
You can view records of the task in the event logs
when mail forward by Outlook rule.
