I am trying to find a way for employees to email an address for feedback, and that email be sent to administrators without them knowing who they are. I am think that there should be a way like making an email account that will forward all messages
on to the administrators, but strip the email of the original senders information.

I'm afraid you would be giving submitters a false sense of security becuase even if the item that actually arrives in the mailbox were sanitized of all sender information, there are still other ways of finding out who the sender is.
Exchange 4.0 came with a public folder application that supposedly did this, but it was easily crackable.Ed Crowley MVP "There are seldom good technological solutions to behavioral problems."
