Implement ADFS on-premise and link to Office365 with existing users in Office365

I am in the middle of a project where we have an existing Office365 setup and a new on-premise Active Directory, with ADFS and Windows Application Proxy configured.

I am at the stage where I need to convert the office365 domain to be a federated domain. What I am trying to find out is how this affects the existing office365 users.

I have created a matching set of users in the on-premise active directory and made sure they all use the correct upn of username @ domain .com

When I convert the domain to be a federated domain, will the users all have to then use whatever passwords are configured in the on-premise active directory or can they use both the on-premise and the existing office365 user/password?
Ideally I would like to migrate a few users at a time, is this possible or does it have to be all or nothing?

I don't want to just "give it a go" as there are around 50 users that could potentially be affected by this and I'd rather be able to say to them "at this specific time, your password will change to a new one" so that we can arrange for this to be done over a weekend or something.
