Hi Xavier,
Outlook crash might be caused by several reasons:
Huge data files on the server If you have thousands of messages on the server, some users are reporting days before the sync is complete causing Outlook to be unstable and crash. If you can create smaller folders, this might help with the sync.
Your base system files If your OS files are not updated and you are running an old version of Safari, you could be experiencing problems. Download the latest Apple combo updater and run Software Updater under the Apple in the Menu bar. I also suggest running Repair Permissions using Disk Utility.
About how to troubleshoot your crash issue, please refer to this article and follow the "Quick Steps to Troubleshoot":

Hi Xavier,
I didn't think the other reply was very helpful, so I thought I would add my own comment here. It looks like Outlook 15.11.2 has a bug that causes the background sync process to deadlock. Eventually it gets to the point where you have to force-quit (this can happen anywhere from about 10 to 30 minutes after you start Outlook). The application is unusable and I have no idea how it got through testing, since the preview version 15.11.1 that came before it is much more stable.
If you can, try and get hold of 15.11.1 - If you obtain it, then you can drag 15.11.2 out of the Applications folder and into the Trash can, then install 15.11.1 and you will not lose any of your settings or messages. Failing that, you may have to
go back to Outlook 2011 if you have it available.
One other possible solution is that the problem seems to happen more often if you have multiple mail accounts, so you may be able to make it more stable by temporarily setting non-primary accounts so that they don't sync automatically (you can do this by
going into Outlook's preferences and changing the Accounts option there). However there have been reports that this may not completely resolve the problem.
In the meantime there is not much more that can be done, other than wait for Microsoft to resolve this issue. They are definitely aware of the problem as it has affected a lot of people using the software!
