Hey Bruce so to do this via the MS method you would need to have an Exchange 2003 server operational within your organization so that you could use the MS RSG method which Peter gave you a link to. However that said you cannot just stand up a 2003
server to accomplish this since if the previous servers were probably already pulled from AD. Therefore to accomplish this you really have a few options
1. Build a test network with Exchange 2003, DC's etc and ensure that its not connected to your live system. You will also need to restore AD from from a point in time when the 2003's Exchange existed. Once you get that up you can use the RSG
method.
2. If you have the physical copies of the databases on disk you can use a 3rd party utility to access the offline EDB and then extract the Mailboxes to PST OR recover them to a production server.
3. If you only have backups on tape then you should look to see if they have an option to restore the raw files to an alternate location on disk.
3rd party utilities: So there are a handful of utilities out there all varying in price and capabilities and we make one as well. That said all utilities are not created equal so if you value getting the data back in a complete and accurate manner
I would encourage you to steer away from the lower end tools.
Obviously we would like you to use our DigiScope product, however since you might think I am just trying to steer you towards DigiScope let me say that there are really only 3 tools on the market you can trust with your data which are Ontrack PowerControls,
Dell/Quest Recovery Manager for Exchange and Lucid8's DigiScope. Buy any one of these 3 and you will be happy with the results, anything else IMHO you should avoid if you value the accuracy of the data being recovered.
