You can check the step by step guide by Paul which I hope should be exactly what you are looking for. Basically you need to restore the Windows backup and after successfully restoring you can run the

Alternatively, you can also export (as a backup) individual mailbox into PST using Powershell.  Just found this resource on web Exchange 2010/2013 Mailbox Backup by PST-Export Powershell
