No one can give you "recommended" number it depends on a number of factors. You can add more than 32 if you bump up the value limit via the registry. The performance hit doesn't just come from the number of mailboxes you open but the size of the mailbox and it's associated item count. The performance hit would usually come from the default limit of 11 cached views. With 2010 it's more tolerable to the item count. But again I can't really say what the recommendation is. The session limit is enforced at both the mailbox and CAS level by the throttling policy in Exchange 2010. Note also that you can cache shared mailboxes which can mitigate the performace impact on the server side, but increased the size of the user's mailbox cache on the local workstation.
