There isn't any direct way, every mail transaction is stored into message tracking log so you need to grab the information from it.

Refer below similar thread for different ways and links available for Exchange 2007...

Hi,Besides, I think you may try to use System Center Operation Managers 2007 to monitor the outgoing and incoming mail on Mailbox. In Exchange 2007 MP, we have several reports on message delivered and received

Exchange2007 Mailbox Messages Delivered Report which shows the number of messages delivered to the selected Exchange2007 Mailbox servers over time.Exchange2007 SMTP Messages Sent report which shows the number of messages sent by the selected Exchange2007 Mailbox servers to the transport over time. Exchange2007 SMTP Messages Received Report which shows the number of SMTP messages received by the selected Exchange2007 Hub or Edge Transport servers over time.
Exchange2007 SMTP Messages Sent Report which shows the number of SMTP messages sent by the selected Exchange2007 Hub or Edge Transport servers to the transport over time.

More information you can get from the Exchange 2007 MP for System Center Operation Managers 2007.Try to find OM2007_MP_EX2007_R2.doc after you install the MP.

Also you can customize the report via modify the MP.

Well, Log Parser and Process Tracking log tool are pretty simple and given examples in below links. It doesn't harm anything, it just scan the message tracking log and display the result...
