Exchange will use nearly all the memory you give it to cache mailbox content. This is something that has been true since the beginning of Exchange. It's nothing to worry about, Exchange will release memory if other tasks need it. 6GB of memory isn't much for an Exchange server with all roles. If adding more memory hasn't solved your stability problems, then you should ensure youre running at the latest service pack and rollup hotfix level, and you should look at whatever third-party software you're running on the system.Ed Crowley MVP "There are seldom good technological solutions to behavioral problems."

The process that uses up all the memory is store.exe. It will release memory as needed. If you suspect a memory leak, examine other services' behavior to see if they keep growing. In such a case, store.exe should start decreasing in size as the leaky processes keep demanding memory. Performance Monitor can help with this.
