Exchange Organization Name Change
Is it possible to rename an organization in exchange 2007?

unfortunately you can't , at least with the RTM Release of Exchange Server 2007, i am not sure after SP1 of Exchange Server 2007whether this options will be available or not.

It is a fresh install of exchange that we did not go live with yet, but we did bind the mailboxes with the AD accounts. Do you think it would be easier to remove the mailboxes,then exchange and start over?
