Where can I set the option for Exchange 2007 active sync authentication? Specifically, whether or not log on using UPN or domain\username?

Thats not an option with Activesync. Either methods will work.

Where can I set the option for Exchange 2007 active sync authentication? Specifically, whether or not log on using UPN or domain\username?
The ActiveSync authentication method can be changed if you are Exchagne administrator. Which means, you need to logon into Exchange server first.
If you are an end user, I'd suggest you contact your IT guys and let them know your requirement.
