Or use the quick and dirty solution which is to simply delete the PF database using ADSI Edit.

Thanks for the reply.
We've attempted the steps using the Exchange Management Shell without success.
Get-publicfolder \ -recurse |ft Name,Replicas returned -the task cannot find a mailbox to logon th public folder database.
Get-PublicFolderStatistics -Server OurLovelyServer returned - The task cannot find a mailbox to logon th public folder database
The "simply delete the PF database using ADSI Edit"seems like it the next best option, Do you have any links/resource which will outline the process?

Open ADSI Edit and then navigate to:
Configuration > Configuration -> Services > Microsoft Exchange > Exchange organization > Administrative Groups > Exchange 2007 administrative group > Servers > serverholding the PFstore that youwish to delete > Information Store > the storage group containing the store that you want to delete
Right-click on the PF store and select Delete in the context menu and voila the server can be uninstalled

Thanks!!
Just to make it crystal clear to follow.
Once you get to ADSI edit, you need to right click on ADSI edit "Connect to" >> "select a well known naming contect:" >> Choose Configuration >> OK
Then you can proceed with the below
Configuration > Configuration -> Services > Microsoft Exchange > Exchange organization > Administrative Groups > Exchange 2007 administrative group > Servers > server holding the PF store that you wish to delete >
Information Store > the storage group containing the store that you want to delete
Right-click on the PF store and select Delete in the context menu and voila the server can be uninstalled
