I'd like to define a search folder, which shows all mails sent to a specific adress within last 30 days (not last month!). In the search folder setup I can only choose either the timeframe or recipient, but not both. Any ideas?

Have you tried the Advanced option?
When you customize the Search Folder, click Advanced tab. You can add fields to the list of criteria:
For searching the mails sent to the specific recipient in last 30 days, add the following fields to the list:
To : Type e-mail address in Value
Sent: Select on or after in Condition and set the date which is 30 days before in Value.
It seems there isnt a condition like Last 30 days. We may need to specify the start date.

I solved it now by enabling advanced query builder and defining the ("sent last month" OR "sent this month") query. Works fine for me.

I wanted to do the same as you, and tried various settings until I tried using the condition "on or after" and "30 days ago" in the value field when creating the criteria on the Advanced Tab. I haven't tested it too exhaustively but it seems to work. It even seems to work for other settings like "2 days ago" or "10 days ago".
Taking this approach avoids specifying a start date as suggested earlier or the need for a "this month" + "last month" technique.
I've tried it out briefly on Outlook versions 2007 and 2010.

I like to be able to track and search all of my mail traffic so I have a Search Folder that includes my Inbox, Outbox, Sent, Drafts, etc. I also have a similar Search Folder with the same criteria, but only looking for mail items with attachments.
Previously, I'd been using "Received on or after" and a specific date (eg 1/01/2015) as the criteria. This worked, but was a pain in the tail as the search criteria gave an ever-increasing list of results. I used to have to go in and change the date when the output became too much--- using work computer which isn't really up to scratch from a performance point of view.
I changed the search criteria to "6 months ago" and it worked! Perfectly!!
