If you deploy a BES server, the messages will actually be sent through Exchange, so the From address will be the same as if you used Outlook. It looks like you are using BIS which is for consumers and small business and does directly integrate with Exchange. You might want to try the BlackBerry forums at http://supportforums.blackberry.com/ Your other option is to have the BlackBerry get in to your email environment via IMAP or POP3 and when you send through the BlackBerry, it goes through RIM's SMTP but they let you put whatever you want in the From field. Again this really doesn't have much to do with Exchange other than how to set up Internet-facing IMAP and POP.
