Adding additional Domain

I have a single domain environment I am running windows server 2008 R2 domain controller and exchange server 2010. I have been ask to add a second domain to the exchange server to use for receiving and sending email. now my question is will it be wise to create a second domain in my forest before adding it into exchange server or should I just add the second domain to the exchange server? If I add to the exchange server the second domain, will I be able to chose which domain to assign to any mailboxes I create?

If you are referring to SMTP domain, then no need to add to your AD forest unless you want the users to have the new domain suffix as a UPN as well.

And yes you will be able to choose and set email address policies as needed.
